5 Rules of Marinating Meat
1. Score meat or prick surface with fork to let marinade penetrate
2. Acids (wine, vinegar, citrus) make meat mushy if marinated too long
3. Refrigerate meat while marinating and flip 1/2 way through marinating
4. Wipe off most of the marinade before cooking to stop grill flare-ups
5. Never recycle marinade - it's contaminated!
